Eggplant Wraps

Ingredients:

1 eggplant, diced
1-2 portabella mushrooms, chopped
1 red onion, chopped
1 red pepper, chopped
1 green pepper, chopped
2-3 tbsp. olive oil
2 tbsp. balsamic viniagrette
buffalo mozzarella cheese
sundried tomato wraps

Directions:

1. Saute egg plant, mushrooms, onion and peppers in olive oil.
2. Stir in balsamic vinegar.
3. Place mixture in wraps, top with cheese and roll!
